Carlos Hannon joined Madinat Jumeirah in August 2013. He is an award-winning chef who has studied and worked all over the world. With successful careers in Las Vegas, New York, Belgium, Spain, Saudi Arabia, Japan and the British Virgin Islands, his international experience combined with his Central American roots has strongly influenced his dynamic culinary style and technique.



In his role as the official patron of Tortuga, Carlos promises to welcome all diners like guests in his own home, fulfilling the philosophy “Mi casa, es su casa.”



With his constant drive to maintain the highest standards of excellence in food and culinary experience, Carlos brings his unique flair, energy, expertise and invaluable knowledge to Madinat Jumeirah’s new and exciting Mexican restaurant.
