For an introduction to Rouge, Uchiyama has paired traditional drinks with inspired canapés, to be enjoyed at the bar. These include Daiginjou sake alongside a spicy ponzu, oyster and cucumber canapé and plum wine served with ume, shiso leaves, sea urchin and a quail’s egg.

Located in the hotel’s stunning all-glass atrium, the scene is set for a superb dining experience. Overseen by a culinary mastermind who has worked with some of the best restaurateurs in the world, Rouge elevates Chinese and Japanese cuisine to a fine art. Executive Chef Naoki Uchiyama sources ingredients from all over the globe, prepared using both Asian cooking techniques, to create something unique.

The style at Rouge is cutting edge, with contemporary furnishings, distinctive twinkling glass canopies above each table and exceptional service. Uchiyama’s speciality is creative Chinese and Japanese cuisine, whereby popular dishes are prepared with a surprising twist. The result is a menu that is fresh and exciting. Guests may also dine at the bar, where an Asia-inspired cocktail list, the hotel’s master wine list and a selection of beers and sakes are served.
