Lash was a chef with Chicago's Rick Bayless, who helped launch a number of fast-casual Mexican restaurants in Chicago and New York. Bayless was a pioneer of contemporary, regionally-inspired Mexican cuisine in the United States. Studying under Diana Kennedy, an ethno-gastronomer who introduced the art, history, relevance, and complexity of Mexican cuisine to a global audience, further fueled Lash's love and commitment to maintaining original Mexican flavors and culinary skills.Being well-versed in the methods, tastes, and subtleties of Mexican cooking, Chef Lash is delighted to introduce the beauty of real Mexican food to Dubai at Lila.
