Nonno Vinni, our grandfather, is from the Lazio area of Italy, which is home to the renowned metropolis and old Roman city. We missed the Pizza Romana (also known as pizza al taglio) type pizza from our Nonno's native country because the only pizza that is served in Dubai is the Napolitano or American style.In order to provide the crispy base, fluffy dough, and delicious Italian toppings to the rest of our friends and neighbours in Dubai, we made the decision to take matters into our own hands and introduce the recipes and methods of long dough fermentation and high heat cooking.Our team consists of family, whether related by blood, or family by dough! Run by 2 generations of our family, our head chef is the youngest sibling in the family, but the most culinarily skilled. A master of perfection, you can be sure that the technical dough preparation is being done right.
