Pizzeria Olivella is a traditional, rustic pizzeria is in the quintessentially friendly Italian country style. It specialises in authentic Neapolitan pizzeria in a warm, friendly atmosphere reminiscent of laid-back Italian charm.



All pizzas are made in an Italian wood-burning oven in the traditional thin-crust, flame-charred Neapolitan style. Only slow fermentation durum wheat flour from Naples is used requiring a quarter of the yeast of regular pizzerias and is left to rise slowly for 48 hours (as opposed to the standard 2 hours) producing a very light, easy-on-the-stomach dough. Together with Neapolitan grown San Marzano tomatoes and Fior Di Latte Mozzarella, as mandated by the Association of Neapolitan Pizza Chefs, this creates a deliciously light, well-balanced, flavour-packed pizza.



Description

At the pizzeria’s entrance is a little ‘Alimentari’ (Italian Grocery). This features Abu Dhabi’s widest selection of Truffle and Porcini Mushroom products including Italian Acacia Truffle honey, White Truffle Olive Oil and Fresh Cut Porcini Mushroom heads ideal for making any home meal infinitely better- and a little sampling table is available for guests to try before they buy too.
